Flavor & cooking character
Sweet, savory onion with thyme and bay, a brothy mushroom body and gentle white-pepper warmth.
Sweet onion leads, like the base of French onion soup, with thyme and bay behind it. Shiitake, porcini and nutritional yeast add a brothy, savory body and a faint nutty note that recalls the cheese topping, without any beef flavoring. White pepper warmth builds late, with no dark specks. It is the lightest-salted blend in the family, because dips, gravy and mashed potatoes bring their own salt.
What to cook
French onion dip, mashed potatoes, gravy and pan sauces, meatloaf, onion burgers, roasted potatoes and sautéed mushrooms and onions.
How much to use & when to add it
Dip: 2 tablespoons (about 17 g) stirred into 16 oz sour cream, or 3 tablespoons for a bolder dip. Chill at least 1 hour, ideally 2 to 4, so the minced onion softens. Mashed potatoes: 1 to 1 1/2 teaspoons per lb of potatoes, stirred into the hot butter and cream before mashing. Gravy or pan sauce: 1 teaspoon per cup of liquid, added with the stock and simmered at least 5 minutes. Burgers and meatloaf: 1 tablespoon per lb, mixed in before cooking.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.
Kitchen recipe: French onion dip
Makes about 2 cups, for 6 to 8 people. In a bowl, stir 2 tablespoons (about 17 g) G.M.O. French Onion Seasoning into 16 oz sour cream. For a richer, tangier dip, use 1 1/2 cups sour cream plus 1/2 cup mayonnaise and add 1 teaspoon fresh lemon juice. Cover and refrigerate at least 1 hour, ideally 2 to 4 hours, so the minced onion softens and the thyme, bay and mushroom flavors bloom.
Stir again and taste. For a bolder dip, stir in up to 1 more tablespoon of seasoning and chill 30 minutes more. Add a pinch of salt only after tasting, because chips bring salt too. Top with chopped chives and serve cold with ridged potato chips, kettle chips or cut vegetables. Keep the dip out no more than 2 hours, and refrigerate leftovers, covered, for up to 3 days.
