White Cheddar Cheese Powder

Color is not a reliable measure of cheese intensity. White cheddar powder is useful for pale sauces and even snack coatings, but it will not melt or bind a recipe exactly like freshly grated cheese.

Popcorn, fries, pretzels, macaroni and cheese, dips, potatoes and snack seasoning.

Start with 1 teaspoon per 4 cups popcorn or 1–2 teaspoons per cup of sauce.

Toss in stages over a light coating of fat, or whisk gradually into a warm sauce.

Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.

Roast 1 pound cauliflower with oil until tender and browned. Toss the hot florets with 1 teaspoon white cheddar powder and a pinch of black pepper. Taste before adding more cheese powder or salt, and finish with chives if desired.
