Unsweetened cocoa adds bitterness as well as chocolate flavor. Natural and alkalized cocoa can behave differently with leaveners, so confirm the product specification before substituting in a chemically leavened cake or cookie.

Start with 1 teaspoon per cup of a drink or sauce; use a tested recipe for baking.

Whisk into a paste with a little warm liquid before adding the rest to prevent dry lumps.

Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.

Mix 1 teaspoon cocoa with 1 teaspoon warm water, then stir into 3/4 cup yogurt. Sweeten to taste and add sliced banana. A tiny pinch of cinnamon gives another aromatic layer without making the cocoa itself sweeter.
