Köfte-style seasoning works in minced-meat dishes, but it does not provide a binder or determine the texture. Handle a mixture gently and check a cooked test portion before shaping the batch. It also gives vegetables and lentils a warm, savory direction.

How much to use & when to add it
1 teaspoon per pound for a first flavor trial.

Warm cooked lentils with sautéed onion, using 1 teaspoon seasoning for two servings. Add a little water to coat evenly. Serve in pita with tomato, parsley and yogurt sauce, adjusting lemon after tasting.
