Flavor & cooking character
Nutty, roasted, savory and gently sweet.
Sesame provides texture as well as a nutty aroma. Crushing some seeds and leaving others whole gives both a more even flavor and a distinct crunch, especially in a dressing or finishing sprinkle.
What to cook
Noodles, rice, vegetables, salads, breads, stir-fries, furikake-style seasoning and za'atar.
How much to use & when to add it
Start with 1 teaspoon per serving of noodles or 1 tablespoon for a shared vegetable dish.
Use mainly at the finish; the seeds are already toasted and can scorch if fried again aggressively.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.
Kitchen idea: Sesame cucumber rice bowl
Top warm rice with cucumber and cooked vegetables. Add 1 teaspoon toasted sesame and a little rice vinegar or dressing. Toss just before eating so the seeds keep some crunch. Taste for salt separately.
