Flavor & cooking character
Salty, sweet, anise-citrus and gently warming.
Sweet Italian sausage seasoning can give fennel-and-herb character without a sugary flavor. For fresh sausage, use a complete recipe and a cooked test portion. The same aromatic direction works in tomato beans or mushrooms without needing a meat base.
What to cook
Sausage, soups, stews, marinara, pizza, meatballs and rice dishes.
How much to use & when to add it
1 teaspoon per pound for a first flavor trial.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.
Kitchen idea: Italian sausage-spiced beans
Soften onion in oil, add 1 teaspoon seasoning, a drained can of white beans and 1/2 cup tomatoes. Simmer gently until saucy. Serve with bread and parsley, tasting before adding salt or more spice.
Ingredients & allergens
Kosher salt, brown sugar, coriander, fennel, black pepper, red pepper, caraway.
