Onion and garlic lead, thyme, rosemary and bay bring the classic Sunday-roast herbs, and shiitake and tomato add depth to the braising liquid. Rub it on the meat before searing and let the rest dissolve into the pot. Long, slow cooking mellows the herbs and pepper, so taste the gravy at the end and adjust the salt there.

What to cook

Chuck roast, beef stew, short ribs, slow-cooker and pressure-cooker roasts, pork shoulder, mushroom stew, gravy and roasted root vegetables.

How much to use & when to add it

1 tablespoon per pound of meat.

Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.

Kitchen recipe: Slow-cooker pot roast

Serves 6. You need a 3-pound boneless beef chuck roast, 3 tablespoons Pot Roast Seasoning, 1 tablespoon oil, 1 pound potatoes, 3 carrots and 1 onion (all cut in large chunks) and 1 cup beef broth.

Pat the roast dry and rub it all over with the seasoning. Sear it in the oil in a heavy skillet over medium-high heat, 3 to 4 minutes per side, until well browned. Set the roast on top of the vegetables in a slow cooker. Pour the broth into the hot skillet, scrape up the browned bits and pour it over the roast. Cover and cook on low 8 to 9 hours, or on high 5 to 6 hours, until fork-tender; by then it is well past the 145°F safe minimum. Rest 10 minutes, skim the fat from the juices, taste for salt and spoon over the beef and vegetables.
