The sugar in this blend browns quickly. Season popcorn, chips and fries after cooking, and add it to wings or roasted nuts in the last few minutes, not at the start.

How much to use & when to add it
For popcorn, start with 1 teaspoon per 4 cups popped corn.
- Start with 4 cups of plain, warm popped corn.
- Toss with just enough unsalted butter or neutral oil for a light surface coating.
- Add the starting amount of seasoning in two stages, tossing between additions.
- Taste several pieces before increasing the dose. Add plain popcorn if the coating is too strong.
Kitchen recipe: Smoky BBQ popcorn
Makes about 12 cups, serves 4. Heat 2 tablespoons neutral oil and 3 popcorn kernels in a large lidded pot over medium-high heat. When they pop, add 1/2 cup kernels, cover and shake often, keeping the lid slightly ajar to vent steam. Take the pot off the heat when the pops slow to 2-3 seconds apart, about 3-4 minutes.
Tip the popcorn into a large bowl, leaving unpopped kernels behind. Season off the heat; the sugar in this blend browns quickly in a hot pan. Drizzle 2 tablespoons melted unsalted butter over the popcorn while tossing. Sprinkle on 1 1/2 teaspoons seasoning and toss, then add another 1 1/2 teaspoons (1 tablespoon in all) and toss again. Taste, adjust a pinch at a time and serve warm.
