There is no cheese in this one, so it works on fruit as well as savory snacks. The acid is bright; start light on mango, watermelon or cucumber and add more to taste.

How much to use & when to add it
For popcorn, start with 1/2 teaspoon per 4 cups popped corn.
- Start with 4 cups of plain, warm popped corn.
- Toss with just enough unsalted butter or neutral oil for a light surface coating.
- Add the starting amount of seasoning in two stages, tossing between additions.
- Taste several pieces before increasing the dose. Add plain popcorn if the coating is too strong.
Kitchen recipe: Chili lime popcorn
Makes about 12 cups, serves 4. Heat 2 tablespoons neutral oil and 3 popcorn kernels in a large lidded pot over medium-high heat. When they pop, add 1/2 cup kernels, cover and shake often, keeping the lid slightly ajar to vent steam. Take the pot off the heat when the pops slow to 2-3 seconds apart, about 3-4 minutes.
Tip the popcorn into a large bowl, leaving unpopped kernels behind. Drizzle 2 tablespoons melted unsalted butter or neutral oil over it while tossing. Sprinkle on 3/4 teaspoon seasoning and toss, then add another 3/4 teaspoon (1 1/2 teaspoons in all) and toss again. Finely grate the zest of 1 lime over the bowl and toss once more. Taste before adding more; the lime is bright and the cayenne builds. Serve right away.
