Tangy blue-cheese character and cayenne warmth can dominate a heavily buttered snack. Use unsalted popcorn as your baseline and add seasoning in stages. A plain, crisp snack alongside it helps a tasting flight stay enjoyable instead of becoming uniformly rich.

Popcorn, fries, potato wedges, roasted cauliflower, chicken tenders, snack mixes, pretzels, chips and roasted chickpeas.

For popcorn, start with 1/2 teaspoon per 4 cups popped corn.

1. Start with 4 cups of plain, warm popped corn.
2. Toss with just enough unsalted butter or neutral oil for a light surface coating.
3. Add the starting amount of seasoning in two stages, tossing between additions.
4. Taste several pieces before increasing the dose. Add plain popcorn if the coating is too strong.

Roast potato wedges until tender and crisp. Toss two servings with a little unsalted butter or oil and 1/2 teaspoon seasoning. Serve with celery and a plain yogurt dip. Taste before adding bottled buffalo sauce or more cheese flavor.
