Flavor & cooking character
Dry mustard develops differently depending on moisture, temperature and acidity. It can contribute sharpness and help a dressing feel more cohesive, but it is not an equal-volume replacement for prepared mustard, which already contains liquid and other ingredients.
What to cook
Barbecue sauces, vinaigrettes, deviled eggs, macaroni and cheese, curries and dry rubs.
How much to use & when to add it
Start with 1/4 teaspoon per cup of sauce or dressing.
For a sharper paste, mix a small amount with cool water and let it stand briefly before adding other ingredients.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.
Kitchen idea: Mustard yogurt dressing
Stir 1/4 teaspoon mustard powder with 1 teaspoon cool water. After a few minutes, whisk into 1/2 cup yogurt with lemon juice and a little honey to taste. Serve with roasted potatoes or cabbage slaw.
