Flavor & cooking character
Garlicky, gingery, lightly sweet, peppery and sesame-forward.
Korean-style beef flavor is often built from a balance of savory, sweet and aromatic elements. A dry seasoning is a starting point, not a complete marinade. Brown the food first, then add just enough liquid to coat it without losing the seared texture.
What to cook
Beef, mushrooms, tofu, rice bowls, lettuce wraps and stir-fries.
How much to use & when to add it
1 teaspoon per pound of food.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.
Kitchen idea: Korean-style mushroom lettuce cups
Brown chopped mushrooms and onion, using 1 teaspoon seasoning per pound of mushrooms with a splash of water. Spoon into lettuce leaves with rice and cucumber. Add soy sauce or a sweetener only after tasting the filling.
