Kingston Pineapple Jerk Rub

Allspice-rich, herbal, fruity and hot with thyme, garlic, ginger and warm spice.

Pineapple-style fruitiness gives this jerk-inspired rub a sweeter direction. It does not establish that the powder will tenderize meat. Let the allspice and herbs lead, then use fresh lime or a crunchy side to balance the fruit and heat.

Chicken, pork, wings, tofu, mushrooms, pineapple and grilled vegetables.

1/2–1 teaspoon per pound of food.

Rub onto food before grilling or roasting, ideally with a little oil and optional fresh citrus. The fruity component can caramelize, so monitor high heat.

Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.

Roast 1 pound sweet potatoes with oil and 1 teaspoon rub at 400°F until tender. Serve with beans, rice and a little fresh pineapple. Finish with lime and cilantro after tasting the spice level.

This is a jerk-inspired dry rub; traditional jerk also involves technique and fresh aromatics.
