This sweet, chile-led seasoning can build a browned coating, but a high-sugar rub is not a reason to use the hottest part of the grill. Apply lightly and move food away from intense heat if the surface darkens too fast. Taste before glazing.

How much to use & when to add it
1/2–1 teaspoon per pound of food.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.
