Jollof rice is cooked in a well-fried tomato and pepper base seasoned with thyme, bay and curry-style spices. This blend carries that seasoning along with tomato and red bell pepper powders to deepen your own base. Fry it briefly in oil with onion and tomato paste before adding the rice and stock, and season with salt or stock at that stage, since the blend itself is salt-free.

What to cook

Jollof rice, chicken and rice, shrimp and rice, rice and beans, baked chicken thighs, vegetable stews and tomato-based soups.

How much to use & when to add it

1 tablespoon per cup of uncooked rice.

Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.

Kitchen recipe: Weeknight jollof rice

Serves 6. In a heavy 4-quart pot, cook 1 chopped onion in 3 tablespoons oil over medium heat for 5 minutes, until soft. Stir in 3 tablespoons tomato paste and 2 tablespoons Jollof Rice Seasoning and fry 3 minutes, until the paste darkens to brick red. Add one 14.5 oz can crushed tomatoes and cook 8 to 10 minutes, until thick.

Stir in 2 cups rinsed long-grain rice and 2 1/2 cups stock. The blend is salt-free, so add about 1 teaspoon salt, less if your stock is salted. Bring to a boil, cover tightly and cook on low about 25 minutes, until the liquid is absorbed and the rice is tender; add 1/4 cup more stock if it dries out first. Rest covered 5 minutes, fluff with a fork and serve with fried plantains or grilled chicken cooked to 165°F.
