Flavor & cooking character
Bright citrus, floral, herbal and tingling with a clean peppery finish.
Sansho offers a tingling sensation as well as aromatic lift. It does a different job from black pepper or hot chile, and a large dose can overwhelm the tongue even when the dish does not taste conventionally spicy.
What to cook
Grilled eel, chicken, noodles, rice, mushrooms, vegetables, seafood and finishing spice blends.
How much to use & when to add it
Begin with a small pinch over one finished bowl or serving.
Add at the end of cooking so its citrus aroma stays distinct.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.
Kitchen idea: Sansho mushroom rice
Brown sliced mushrooms, spoon them over warm rice and finish with a small pinch of sansho. Add a few drops of soy sauce if desired. Taste before adding more pepper, then add scallion for a fresh contrast.
Ingredients & allergens
Ground Japanese sansho pepper (Zanthoxylum piperitum).
