Istanbul Urfa Sumac Kebab Rub

Deep Urfa chile fruitiness, tangy sumac, cumin, garlic and herbal warmth.

Urfa's darker fruitiness and sumac's tartness make this useful where ordinary hot chile would be too one-dimensional. Use it on a browned base and taste before adding lemon. A fresh onion-and-parsley garnish echoes the kebab-style direction without a heavy sauce.

Kebabs, lamb, beef, chicken, mushrooms, eggplant, onions and grilled vegetables.

Season before grilling or roasting and pair with olive oil, fresh herbs and lemon if desired.
