Its dark citrus character brings earthy depth as well as tartness. It will not taste like a squeeze of fresh lime; too much can emphasize bitterness, so build the flavor gradually in a moist dish.
What to cook
Kabsa, rice, lentils, stews, braises, grilled meats, vegetables, soups and marinades.
How much to use & when to add it
Start with 1/4 teaspoon per cup of stew or 1/2 teaspoon per pound of vegetables.
Add a little during cooking, then taste before adding another acidic ingredient.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.
Kitchen idea: Black lime lentils
Warm 1 cup cooked lentils with 1/4 cup water, 1 tablespoon olive oil and 1/4 teaspoon black lime. Simmer gently, then finish with parsley and a small pinch of cumin. Serve over rice with roasted onions.
