Flavor & cooking character
Oregano gives a bold, slightly bitter herbal backbone that stands up to acid and rich foods. Greek oregano and Mexican oregano have different flavor directions; choose intentionally instead of assuming the names describe identical herbs.
What to cook
Greek-style potatoes, salads, tomato dishes, grilled vegetables, chicken, fish and marinades.
How much to use & when to add it
Start with 1/2 teaspoon per pound of potatoes or 1/4 teaspoon per cup of dressing.
Rub the leaves gently and hydrate in oil and lemon juice or a moist cooked dish.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.
Kitchen idea: Oregano white bean salad
Toss one drained can of white beans with 1 tablespoon olive oil, 1 tablespoon lemon juice and 1/2 teaspoon oregano. Add chopped tomato and cucumber, then let the flavors settle briefly before adjusting the seasoning.
