G.M.O. stands for Garlic · Mushroom · Onion. This is the smoky, warm blend of the family, for burgers, chicken and wings, pork chops, steak tacos, fries, sweet potatoes and corn.

Flavor & cooking character

Smoky, garlicky and savory, with medium chipotle warmth.

Garlic and onion open, then a slow chipotle warmth with a smoky edge. Smoked paprika adds a campfire note and a brick-red color. Porcini and shiitake sit under the smoke and linger after the heat fades, so it tastes like a smoky garlic-mushroom-onion blend, not taco seasoning.

What to cook

Burgers, chicken and wings, pork chops, steak for tacos, fries, roasted potatoes and sweet potatoes, and corn.

How much to use & when to add it

Burgers, chicken, pork and steak for tacos: 1 tablespoon (about 9 g) per lb, rubbed on right before cooking or up to 24 hours ahead. Wings: 1 1/2 tablespoons per 2 lb, tossed with a little oil before baking or air-frying. Potatoes, fries, corn and sweet potatoes: 2 to 3 teaspoons per lb, tossed with oil before roasting, or shaken on fries straight from the fryer; taste and add salt if needed. Grill over medium-high and finish over indirect heat, because chipotle and paprika scorch and turn bitter over a roaring flame.

Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.

Kitchen recipe: Smoky chipotle wings with lime crema

Serves 3 to 4 as a starter. Pat 2 lb chicken wings (flats and drumettes) very dry with paper towels. In a large bowl, toss them with 1 tablespoon neutral oil, then with 1 1/2 tablespoons G.M.O. Smoked Chipotle Seasoning until evenly coated. For extra-crisp skin, also toss in 1 teaspoon baking powder (not baking soda). For the lime crema, stir together 1/2 cup sour cream, the juice of half a lime and 1/4 teaspoon seasoning, and refrigerate.

Air fryer: heat to 400°F and cook the wings in a single layer, in two batches if needed, 22 to 25 minutes, shaking the basket halfway. Oven: bake on a rack set over a foil-lined sheet pan at 425°F for 40 to 45 minutes, turning once. The wings are done when the skin is crisp and the thickest piece reads at least 165°F; they turn more tender at 175 to 185°F. Toss with 1 tablespoon melted butter and a squeeze of lime, taste and add a pinch of salt if needed, and serve with the lime crema.
