The warm chile-and-cumin direction works well with browned beef flavors, but it also gives beans and mushrooms a hearty character. Keep a cooked test portion in mind when seasoning a burger mixture. Fresh tomato and onion can balance the earthier notes.

How much to use & when to add it
1 teaspoon per pound for a first flavor trial.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.
Kitchen idea: Fort Worth bean mash
Warm one drained can of pinto beans with 1 teaspoon seasoning and 1/4 cup water. Mash coarsely and spoon into a toasted roll with lettuce and tomato. Add a little mustard or salsa after tasting the seasoned beans.
