Flavor & cooking character
Thyme bridges earthy mushrooms, sweet onions and savory broths without the strong pine note of rosemary. If using it with another dried herb, start with smaller amounts of each rather than stacking full doses.
What to cook
Soups, stews, chicken, vegetables, beans, potatoes, Creole-style dishes and Mediterranean cooking.
How much to use & when to add it
Start with 1/2 teaspoon per pound of mushrooms or 1/4 teaspoon per cup of soup.
Rub lightly before adding; it can join a slow simmer or a moderate-heat sauté.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.
Kitchen idea: Thyme mushrooms
Brown 8 oz sliced mushrooms in 1 tablespoon olive oil. Add 1/4 teaspoon thyme and a splash of water, then cook until the liquid reduces. Finish with black pepper and serve over toast or fold into cooked grains.
