Marjoram is a useful choice when oregano would feel too forceful. Give it space beside mild beans, potatoes and mushrooms rather than burying it beneath heavy smoke or a large dose of hot chile.

How much to use & when to add it
Start with 1/2 teaspoon per pound of vegetables or 1/4 teaspoon per cup of soup.
Add during the last part of gentle cooking so its delicate sweetness remains noticeable.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.
Kitchen idea: Marjoram white beans
Warm one drained can of white beans with 1/4 cup water, 1 tablespoon olive oil and 1/2 teaspoon marjoram. Mash a few beans to thicken the liquid and finish with lemon zest and black pepper. Serve alongside roasted vegetables.
