Diablo Burger Seasoning

Spicy and sweet with bold aromatics, saltiness and a surprising citric twist.

Sweetness can soften the first impression of a hot blend, so give yourself time to judge the finish before adding more. The tangy element also means extra vinegar may be unnecessary. Pair with a plain starch or crisp vegetables rather than another heavily seasoned side.

Burgers, steaks, meatballs, ribs, chicken wings, pork, chili, potato wedges, corn, sweet potatoes, sauces, relishes and chutneys.

1/2 teaspoon per pound to begin.

Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.

Toss 1 pound potatoes with oil and 1/2 teaspoon seasoning. Roast at 425°F until browned and tender. Serve with plain yogurt and sliced cucumber, then add another tiny pinch to individual portions if desired.
