Sweet, warm and earthy with savory heat.

The sweet paprika-and-chile direction suits slow roasting as well as barbecue. Keep the coating thin during high heat and save any extra glaze for late in the cook. A dark crust should taste browned and savory rather than acrid.

Ribs, brisket, chicken, pork, tofu, corn, okra, potatoes, cauliflower, eggplant and sweet potatoes.

1 teaspoon per pound of food.

Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.

Roast 1 pound sweet potato cubes with oil and 1 teaspoon rub at 400°F until tender. Serve with plain beans, rice and a tangy slaw. Add a little lime to the potatoes after tasting.
