A corn seasoning can bring salt, smoke and citrus together, so taste before adding the usual salted butter. A little unsalted fat helps it stick to the kernels. Apply in stages while turning the corn rather than leaving a heavy stripe on one side.
What to cook
Corn on the cob, pasta salad, macaroni and cheese, cornbread, roasted vegetables, fish, chicken, hummus, beans, dressings and marinades.
How much to use & when to add it
1/4–1/2 teaspoon per cup of cooked corn.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.
Kitchen idea: Seasoned corn cups
Warm 1 cup corn with 1 teaspoon unsalted butter or oil. Toss with 1/4 teaspoon seasoning, taste and add another small pinch if desired. Finish with parsley or scallion and serve alongside grilled food.
