Cocoa contributes bitterness and depth, not just a chocolate-dessert association. The ancho and warm spices make it useful in savory dishes with browned onions or tomatoes. Add a little acidity at the end if the overall impression becomes too dark or heavy.
What to cook
Chili, black beans, squash, carrots, lamb, beef, mushrooms and mole-inspired sauces.
How much to use & when to add it
1/2 teaspoon per two servings to begin.
Use during cooking in stews, beans and braises so the cocoa and spices have time to integrate. Start modestly and build.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.
Kitchen idea: Cocoa ancho lentils
Soften onion in oil, add 1/2 teaspoon blend, 2 cups cooked lentils and 1/2 cup crushed tomatoes. Simmer gently with water as needed. Finish with lime and parsley, tasting before increasing the cocoa-spice intensity.
