This blend's citrus aroma does not necessarily supply the acidity of fresh juice. Use it to perfume a dish during cooking, then decide whether a squeeze of lemon is needed. A light coating lets the herb notes remain clear.
What to cook
Fish, chicken, pork, pasta, rice, roasted vegetables, vinaigrettes, marinades and dipping sauces.
How much to use & when to add it
1 teaspoon per pound of food.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.
Kitchen idea: Citrus roasted fennel
Slice a fennel bulb into wedges and toss with oil and 1/2 teaspoon seasoning. Roast at 400°F until tender and browned. Finish with lemon juice to taste and serve with beans, fish or a simple grain dish.
