Bright, garlicky, herb-forward seasoning inspired by Argentine and Uruguayan chimichurri.

Flavor & cooking character

Parsley, garlic, oregano, red pepper, black pepper and tangy herbaceous notes.

Hydration turns dry herbs into a more cohesive sauce. Use a little water as well as oil and vinegar, then allow a short rest. The result is a pantry version of chimichurri rather than the texture of a freshly chopped herb sauce.

What to cook

Steak, chicken, vegetables, potatoes, grilled mushrooms, marinades and vinaigrettes.

How much to use & when to add it

1 teaspoon per drained can of beans.

Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.

Kitchen idea: Chimichurri bean toast

Mix 1 teaspoon seasoning with 1 tablespoon olive oil, 1 teaspoon vinegar and 1 teaspoon water. Rest briefly, then toss with warm white beans. Spoon over toast and add chopped parsley if available. Taste before adding extra acid.

Culinary background

Chimichurri is an uncooked herb sauce strongly associated with Argentina and Uruguay. This dry seasoning supplies a starting flavor profile; water, oil and acid create the sauce texture. Give dried herbs time to soften before serving.
