Cheddar Cheese Powder

For dry snacks, a little surface fat helps the powder adhere. In a sauce, whisk it in gradually to avoid lumps. It adds concentrated cheese flavor but is not a one-for-one structural substitute for grated cheddar.

Popcorn, macaroni and cheese, fries, pretzels, potatoes, dips and snack mixes.

Start with 1 teaspoon per 4 cups popcorn or 1–2 teaspoons per cup of sauce.

Sprinkle in stages over lightly oiled warm snacks, tossing between additions.

Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.

Roast 1 pound lightly oiled potato wedges at 425°F until tender and browned. Transfer to a bowl and toss with 1 teaspoon cheddar powder while hot. Taste before adding more, and finish with chives if desired.
