Maple rounds the Cajun-style pepper and herbs, making this well suited to naturally sweet vegetables. Add vinegar or citrus at the end if it tastes too sweet. Keep the heat moderate enough that the coating browns without turning bitter.

How much to use & when to add it
1 teaspoon per pound of food.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.

Roast 1 pound squash cubes with oil and 1 teaspoon seasoning at 400°F until tender. Serve over rice with black beans and sliced scallion. Add lime juice to taste for a brighter contrast to the maple character.
