There is no garlic or herb in the blend, so it keeps the clean cheese-and-pepper profile. For pasta, toss it in off the heat with butter and a splash of starchy pasta water so it clings to the noodles in an even, peppery coating.
What to cook
Spaghetti and buttered noodles, scrambled eggs, popcorn, fries, roasted broccoli and asparagus, baked potatoes, grilled corn and Caesar-style salads.
How much to use & when to add it
2 tablespoons per 4 ounces of dry pasta, or 1/2 teaspoon per serving as a finishing sprinkle.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.
Kitchen recipe: Cacio e pepe spaghetti
Serves 2 as a main. Bring 3 quarts water and 1 teaspoon salt to a boil; keep it lightly salted, since the Parmesan in the blend brings salt. Cook 8 ounces spaghetti until just al dente, about 1 minute less than the package time, and save 1 cup of the starchy pasta water before draining.
Melt 2 tablespoons butter in a wide skillet over low heat, add the pasta and take the pan off the heat. Sprinkle in 1/4 cup (4 tablespoons) Cacio e Pepe Seasoning in two additions, adding 6 to 8 tablespoons pasta water a splash at a time and tossing constantly with tongs for 1 to 2 minutes. It is ready when the noodles look glossy and evenly coated with no dry clumps. Serve right away with grated Pecorino or Parmesan and extra cracked pepper.
