Keep the tiny seeds evenly suspended so one bite does not hold the entire topping. Their mild nutty character works well with citrus, but more seeds will change texture long before they create a bold flavor.

Start with 1–2 teaspoons per cup of batter, or a light scattering over bread.

Stir through batter for even distribution; for a visible topping, press gently onto a moist surface before baking.

Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.

Stir 1 teaspoon poppy seeds into 3/4 cup yogurt with finely grated lemon zest and a little honey to taste. Add berries and toasted oats just before serving. The seeds provide texture rather than a strong spice flavor.
