Argentine Chimichurri Steak & Wing Rub

Herbal, savory and garlicky with a bright, grill-friendly finish.

A dry chimichurri-inspired rub is different from a bowl of freshly chopped herb sauce. Let it hydrate in a little oil and moisture for a fuller coating. Fresh parsley and a splash of vinegar at serving bring a contrasting fresh layer.

Steak, wings, chicken, potatoes, mushrooms, cauliflower and grilled vegetables.

1 teaspoon per pound of food.

Apply before grilling or roasting, or use as a finishing sprinkle after cooking. For a sauce-style application, combine a small amount with olive oil and fresh acid to taste.

Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.

Toss 1 pound warm cooked potatoes with 1 tablespoon olive oil, 1 teaspoon vinegar and 1 teaspoon rub. Let the herbs soften for several minutes, then add chopped parsley. Taste before adding more vinegar or seasoning.

This is a dry chimichurri-inspired rub, not traditional fresh chimichurri.
