Treat this as a fresh cooking seasoning unless a separate sausage recipe specifies curing ingredients and processing. A spice mix alone does not turn fresh meat into shelf-stable sausage. Its garlic and pepper also work well in beans, where the flavor can develop in moisture.

Kitchen idea: Andouille-style red beans
Soften chopped onion and celery in oil. Add one drained can of kidney beans, 1/2 cup water and 1 teaspoon seasoning. Simmer gently until creamy. Serve over rice with scallion, using a little hot sauce only after tasting.
