Flavor & cooking character
Its fruity character is especially useful when you want chile flavor without a smoky finish. Powder cannot replace fresh chile paste volume for volume: a paste supplies water and bulk as well as pepper flavor.

How much to use & when to add it
Start with 1/4 teaspoon per cup of sauce, or 1/2 teaspoon per pound of vegetables.

Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.
Kitchen idea: Golden potato dip
Mash 1 cup cooked potato with 2 tablespoons plain yogurt, 1 teaspoon lime juice and 1/4 teaspoon aji amarillo. Loosen with water until spoonable, taste, and serve with roasted vegetables. Increase the chile in small pinches.
