Pho broth gets its fragrance from toasted spices simmered for hours. This ground blend is a weeknight shortcut: tie it in a spice bag or tea filter, add it to stock, and it infuses in 20 to 30 minutes. It is a spice blend, not a soup base, so season the broth with fish sauce or salt to taste.

What to cook

Beef, chicken or vegetable pho, other noodle soups, braised beef, roast chicken, grilled pork marinades and spiced glazes.

How much to use & when to add it

1 1/2 teaspoons per quart of broth.

Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.

Kitchen recipe: 30-minute chicken pho

Serves 4. Halve 1 onion and a 2-inch piece of ginger lengthwise. Char them cut side down in a dry soup pot over medium-high heat, 4 to 5 minutes. Add 2 quarts low-sodium chicken stock, 1 tablespoon Vietnamese Pho Spice in a spice bag or tea filter, and 1 pound boneless chicken thighs. Simmer gently 20 to 25 minutes, until the chicken reaches 165°F in the thickest part.

Remove the chicken, spice bag, onion and ginger, and slice the meat. The spice is salt-free, so season the broth with 2 to 3 tablespoons fish sauce and 1 teaspoon sugar. Cook 8 ounces rice noodles as the package directs and divide among 4 bowls. Top with the chicken, ladle over the hot broth and finish with sliced onion, basil or cilantro, bean sprouts and lime.
