Tangerine Hibiscus Rub

Citrusy, tart, floral and lightly sweet.

Tangerine-style citrus and hibiscus bring a fruity, tart direction that can be lost under a heavy sweet glaze. Start lightly and taste before adding another acidic ingredient. Moderate heat protects the coating while the food develops browned edges.

Chicken, pork, salmon, roasted carrots, squash and grilled fruit.

1/2–1 teaspoon per pound of food.

Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.

Toss 1 pound carrots with oil and 1 teaspoon rub. Roast at 400°F until tender, turning as needed. Serve with yogurt and parsley, adding lemon or a little sweetener only after tasting the finished carrots.
