Star Anise Pieces

The woody pieces are intended to flavor a liquid, not provide a crunchy garnish. Their licorice-like aroma is strong, so a short, light infusion is a better starting point than adding several pieces at once.

Broths, pho-style soups, braises, mulled drinks, five-spice blends and infused syrups.

Start with a small piece in 2 cups of simmering liquid; taste during infusion.

Steep gently and strain or remove every piece before serving.

Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.

Simmer pear or apple pieces in water with a small piece of star anise and sugar to taste. When the fruit is tender and the liquid fragrant, remove the spice. Serve warm with oats or chill for a simple dessert.
