Flavor & cooking character
Hot, citrusy, garlicky, gingery and aromatic.
A Thai-inspired dry seasoning supplies one layer of a dish that may also need fresh herbs, acidity and a sauce base. Brown vegetables first, then add a little liquid with the seasoning. Taste before adding another salty or hot condiment.
What to cook
Chicken, shrimp, tofu, noodles, stir-fries, vegetables and rice bowls.
How much to use & when to add it
1/2 teaspoon per two servings to begin.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.
Kitchen idea: Spicy Thai vegetable noodles
Stir-fry peppers and mushrooms, then add two servings of cooked noodles and 1/2 teaspoon seasoning mixed with a little water. Toss until coated. Finish with lime and herbs after tasting, and offer extra heat separately.
