The sensation is different from chile heat. In a mala-style dish the peppercorn contributes the tingling element, while chile supplies heat; adding more of one does not replace the other.
What to cook
Mapo tofu, hot pot, stir-fries, chili oil, noodles, dumplings and mala-style dishes.
How much to use & when to add it
Start with 1/4 teaspoon, lightly crushed, for a four-serving dish.
Toast gently if desired, cool, then crush; remove any hard stems or gritty pieces before use.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.
Kitchen idea: Tingling mushroom noodles
Brown 8 oz mushrooms and toss with two servings of cooked noodles, a little soy sauce and cooking water. Add a small pinch of crushed Sichuan pepper at the finish, taste, then increase only if you want a stronger tingling effect.
