Flavor & cooking character
Chile heat, citrus aroma, toasted sesame and warm spice.
Shichimi is useful as a finishing condiment where you want a small burst of chile, citrus and texture. Add it to the bowl rather than boiling it into a large pot. Taste before adding another hot condiment, especially on a delicate broth.
What to cook
Noodles, rice, soups, grilled vegetables, tofu, eggs and seafood.
How much to use & when to add it
1/4 teaspoon per bowl to begin.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.
Kitchen idea: Shichimi noodle bowl
Prepare a simple bowl of noodles with cooked vegetables and broth. Add 1/4 teaspoon shichimi at the table, stir and taste. Increase by small pinches, keeping the broth itself relatively lightly seasoned so the finishing aroma stands out.
