Rich, salty butter with a creamy dairy finish.

A light spray of oil helps the powder stick if you want to skip melted butter. Add a little at a time; a fine salty seasoning can go from perfect to too salty quickly.

Fresh popcorn, corn on the cob, baked potatoes, steamed vegetables, rice and toast.

For popcorn, start with 1 teaspoon per 4 cups popped corn.

1. Start with 4 cups of plain, warm popped corn.
2. Toss with just enough unsalted butter or neutral oil for a light surface coating.
3. Add the starting amount of seasoning in two stages, tossing between additions.
4. Taste several pieces before increasing the dose. Add plain popcorn if the coating is too strong.

Makes about 12 cups, serves 4. Heat 2 tablespoons neutral oil and 3 popcorn kernels in a large lidded pot over medium-high heat. When they pop, add 1/2 cup kernels, cover and shake often, keeping the lid slightly ajar to vent steam. Take the pot off the heat when the pops slow to 2-3 seconds apart, about 3-4 minutes.

Tip the popcorn into a large bowl, leaving unpopped kernels behind. Drizzle 2 tablespoons melted unsalted butter over it while tossing, or use a light spray of oil to skip the butter. Shake on 1 1/2 teaspoons seasoning and toss, then add another 1 1/2 teaspoons (1 tablespoon in all) and toss again. Taste several pieces before adding more; a fine salty seasoning goes from just right to too salty quickly. Serve warm.
