Pollo asado-style seasoning gives a citrus, chile and garlic direction without providing a complete marinade. Dry the food surface before cooking so it can brown. Use fresh lime at the table if the finished dish needs extra acidity rather than a heavier dry coating.

Chicken thighs, whole chicken, tofu, cauliflower, tacos and rice bowls.
How much to use & when to add it
1 teaspoon per pound of food.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.

Sear sliced peppers and onion, add a drained can of beans and 1 teaspoon seasoning with a little water. Toss until warm and coated. Serve with rice, cilantro and lime, tasting before adding more spice.
