Pickling spice contributes aroma; it does not make a preservation recipe safe by itself. Keep whole spice pieces in a sachet when easy removal matters. Use a tested preserving recipe with its specified vinegar, salt and method rather than changing the ratios to taste.
What to cook
Cucumber pickles, green beans, carrots, onions, corned beef, pastrami-style brines and preserving.
How much to use & when to add it
Follow the tested recipe for preserves; 1 teaspoon in a sachet for a small braise.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.
Kitchen idea: Pickling-spice braised cabbage
Tie 1 teaspoon spice in a food-safe sachet and add to sliced cabbage with a little stock and cider vinegar. Simmer until tender, then remove the sachet. Taste and season the cooked cabbage; this is a cooked side, not a canning recipe.
