Peri-peri-style blends focus on bright chile flavor, but their heat varies. A dry seasoning needs liquid and fat if used as a marinade or sauce. Start lightly and keep a cooling or plain side available so the aromatic details are not lost in heat.

Chicken, shrimp, cauliflower, potatoes, vegetables and grilled tofu.
How much to use & when to add it
1/2 teaspoon per pound to begin.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.
Kitchen idea: Peri-peri roasted potatoes
Toss 1 pound potatoes with oil and 1/2 teaspoon seasoning. Roast at 425°F until tender and browned. Serve with cucumber and yogurt, adding fresh lemon and another small pinch only after tasting.
