A whole-seed five-spice blend from eastern India and Bangladesh designed for tempering, not shaking. Panch Phoron combines nigella, cumin, fenugreek, fennel and mustard seed for dramatic aroma when bloomed in hot fat.

Panch phoron is traditionally used as a whole-seed mixture, so texture and tempering are part of the experience. Warm gently in oil and add the next ingredient before the seeds darken too far. The different seeds should contribute contrast rather than a burnt note.

How much to use & when to add it

1/2 teaspoon per pound of food to begin.
