Nashville Hot Honey & Sumac Wing Rub

Sweet-hot, cayenne-forward and tangy with honey, paprika, garlic, black pepper and sumac.

Honey, cayenne and sumac create sweet heat with a tart edge. The finish can build as you eat, so start modestly. Serve with a plain creamy dip or crunchy slaw and taste before adding another hot sauce or acidic ingredient.

Wings, chicken, cauliflower, fries, roasted nuts and grilled vegetables.

1/2 teaspoon per pound to begin.

Coat lightly before cooking or toss hot cooked wings with a little oil or butter and the rub for a finishing layer.

Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.

Roast 1 pound cauliflower with oil and 1/2 teaspoon rub at 400°F until tender and browned. Serve with yogurt and sliced pickles. Add another small pinch to individual portions only after tasting.
