Flavor & cooking character
Molasses flavor brings darker sweetness than plain sugar. Commercial powders may include carriers, so they do not necessarily have the same sweetness or liquid contribution as thick molasses from a bottle.
What to cook
Barbecue rubs, baked beans, cookies, breads, sauces, popcorn and sweet-smoke seasoning.
How much to use & when to add it
Start with 1 teaspoon per cup of sauce or 1 teaspoon per pound of vegetables.
Blend evenly into a rub or hydrate in a sauce; use moderate heat to avoid scorching the sugars.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.
Kitchen idea: Molasses mustard glaze
Whisk 1 teaspoon molasses powder with 1 tablespoon prepared mustard and 1 tablespoon water. Brush lightly over nearly cooked roasted carrots or squash, return briefly to the oven, and watch closely until glossy.
