Mexican chorizo-style seasoning can bring a chile-and-warm-spice direction to beans or mushrooms as well as fresh sausage. It does not cure meat. For sausage, use a complete recipe and test a cooked portion; acidity and salt may need separate adjustment.
What to cook
Sausage, tacos, burritos, chili, soups, nachos, queso, salsa, sauces, rice, potatoes, eggs and roasted vegetables.
How much to use & when to add it
1 teaspoon per pound for a first flavor trial.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.
Kitchen idea: Chorizo-style mushroom tacos
Brown 1 pound finely chopped mushrooms in oil. Add 1 teaspoon seasoning and a splash of water, then cook until coated. Serve in tortillas with onion, cilantro and lime, adding a little vinegar only after tasting.
